The Springboard Restaurant: Our casual, relaxed bistro is called The Springboard, referencing the fact that the site of this Cork hotel was originally the home of the city's renowned public baths, the Lee Baths, which opened in 1934 and closed in 1986. There are unique images on the walls taken from the years when this area was an enormously popular spot for meeting and spending time together for the locals of Cork. We hope The Springboard is as popular a meeting place as the Lee Baths were back in the day – this time however with our guests looking out at the water instead of in it! The Springboard offers a wonderful and varied menu - open daily from 12.30pm until 9.30pm. This is a snug and intimate bar with a traditional feel, serving a selection of local Cork stouts and beers, as well as craft ciders and traditional whiskeys.

Cliffs of Moher Exhibition Centre
Doolin, County Clare
The Cliffs of Moher stand at 700 ft, at their highest point, above the wild Atlantic shore below. Their range covers 5 miles. O'Brien's Tower magnificently stands on a headland of the majestic Cliffs. On a clear day, you can spot the Aran Islands, Galway Bay, the Twelve Pins, the MaumTurk Mountains in Connemara, and Loop Head to the south.
The state-of-the-art Atlantic Edge Interpretative Centre is a thrilling and recent development here. A huge, domed cave contains exhibits, displays, and experiences. (There is a ramp that makes the dome accessible to all.) When entering the dome, you have the illusion of walking on water as you follow birds’ footprints. There are four main themes here: Ocean; Rock; Nature; and Man. There is no place else on earth where you feel the raw power of the ocean as you feel it at the Cliffs of Moher. Sunrise and sunset visits are very special and memorable.

Galway, County Galway
On the Map: Galway is a coastal city, located in County Galway in the west of Ireland. Galway is well-served by a good network of roads - the M6/N6 from Dublin (to the east) and M18/N18 from Limerick & Cork (to the south).
In a recent nationwide survey the people of Galway were found to be Ireland's happiest! And visiting Galway City, the capital of their county it is not hard to see why. It is a lively university city of narrow streets, quaint shopfronts, bustling pubs and stunning surrounding scenery. It has always attracted a bohemian mix of musicians, artists and intellectuals and that attitude is palpable as you walk the streets. Galway has been commercially important since the 11th century when it was a centre for trade with Spain and Portugal. In 1477 Christopher Columbus paid a visit. Galway earned the title “City of the Tribes” around that time, when it was ruled by 14 wealthy merchant families. Today it is lively, with loads of things to do, and is so popular that it can get very crowded in summer, especially during the annual Galway Races. The annual Arts Festival also attracts thousands, especially for its street parade, organized by the multi-award winning production company, Macnas. Its famous Druid Theatre produces and stages plays and has toured internationally, winning awards, including Tonys on Broadway.

Included Unique Activities
Connemara National Park
Connemara, County Galway
Situated in the West of Ireland in County Galway, Connemara National Park covers some 7,300 acres of awesome mountains, expanses of bog, heaths, grasslands, and woodlands. Take note of the mountains Benbaun, Bencullagh, Benbrack and Muckanaght, part of the famous Twelve Bens or Beanna Beola range. Connemara National Park was established and opened to the public in 1980. Also, keep an eye out for Connemara green marble crafts.
Much of the present Parklands are part of Kylemore Abbey Estate and the Letterfran Industrial School. The rest of the land was owned by private individuals. The southernmost part of Connemara Park was once owned by Richard (Humanity Dick) Martin, the man who helped form the Society for the Prevention of Cruelty to Animals. These Parklands are now wholly owned by the State and managed solely for National Park purposes.
Kylemore Abbey & Victorian Walled Garden
Connemara, County Galway
Set in the Connemara mountains, Kylemore Abbey is a legendary, Neo-Gothic marvel. Given its picture-perfect setting, Kylemore is often touted as Ireland’s most romantic castle. Built in 1868 by the English industrialist, Mitchell Henry, visitors are moved by its history, romance, and tragedy. Henry built the recently reopened church in 1877 as a memorial to his wife, following her untimely death. The church, called a “Cathedral in Miniature”, is a center of prayer and reflection for many.
In 1920, Kylemore Castle was sold to Benedictine nuns, fleeing war-torn Belgium during World War I. Today, visitors are invited to explore the 6 acre Victorian walled garden, complete with restored buildings. Feel free to discover woodland walks, lakeshore strolls, and nature trails throughout the estate.
Joyce Country Sheepdog Demo
Connemara, County Galway
Joyce Country Sheepdogs is part of a family run farm located in Connemara on the West of Ireland. At Joyce Country you’ll have the opportunity to visit a working sheep farm and watch the Border Collie sheepdogs herding Connemara Blackface sheep. Despite technological advances in farming, a replacement for a skilled sheepdog has yet to be found. For many years, dogs were bred to develop the requisite traits of intelligence, stamina, and obedience; the finest example of this is the Border Collie. The handler’s skill is to move the sheep steadily so as to cause no distress. You’ll gain practical insight into these skills with their variety of sheepdogs, plus their individual qualities and styles. The beautiful farm is nestled between the Maumturk and Partry Mountains. Your host, Joe Joyce, is delighted to share his love of sheep farming and dog handling with you! Open to the public March through September 30.

Included Unique Activities
Birr Castle Gardens and Science Centre
Birr, County Offaly

The grounds and gardens are accessible, and you will love exploring them. The castle grounds are home to Ireland’s Historic Science Centre, a museum of Ireland’s scientists and their contributions to astronomy and botany.
Birr Castle Demesne was developed by the Parsons family over the past 400 years. During this period of time, the Parsons family made unique contributions to astronomy, photography, engineering, and botany. The Science Centre highlights these passions. Birr Castle is the oldest, inhabited home in the county. One main feature of the castle grounds is the great “Leviathan of Parsonstown.” It is an astronomical telescope with a 72-inch metal mirror and was put into place by the third Earl of Rose. Must-See Sites
Kilbeggan, County Westmeath
Kilbeggan is a handy place to break a journey across the country and is famous for its old distillery. Kilbeggan, like Mullingar, is located on the River Brosna – here the river has been harnessed to power the water-wheel of the local distillery. Kilbeggan became an important market town as evidenced by the substantial Market House which still survives in the Square though it is no longer used for its original purpose. The market was saved in 2006 and is held in the Square each Saturday morning.
Overnight Location
Enfield, County Meath
On The Map: Enfield lies just off the M4 motorway in south County Meath, located between the towns of Kilcock and Kinnegad. Enfield - formerly and correctly called Innfield, the field of the Royal Oak Inn - has associations with Bianconi's stagecoach road network in Ireland. Going back to Ancient Times, prior to and during the early part of the first millennium A.D., the Enfield area is believed to have been situated on one of the main roads to Tara, the coronation site and seat of the high Kings of Ireland from the 3rd Century until 1022. Located beside the Royal Canal it is a busy thoroughfare. Much conservation and restoration work on the Royal Canal has been carried out by the local community, resulting in a beautiful picnic area. Enfield offers a number of lively pubs on its main street, and also has its own micro-brewery - The Celtic Brew company - which produces the award winning Finians Lager.

Ireland/Scotland trip was a great trip planned with our group and Jorie. We thoroughly enjoyed each city we visited in both countries. All our hotels were very nice but as older adults, I would advise to pack light which is hard to do if your visit is extended but we had to climb stairs in several places. My favorite thing in both countries are the people. Everyone was so friendly and inviting at hotels, restaurants and local sites. We felt completely safe and comfortable. I would agree with other travelers that driving is stressful for both driver and passengers especially in Ireland where the roads are extremely narrow with rock walls on each side. Next trip will include staying in certain cities with tours out. JerPoint Park in Ireland was a favorite of our group of 4. Authentic Vacations plans, reservations and communications were first rate.

Lauren, thank you for putting together a wonderful Scottish and Irish adventure. In many unexpected ways it indeed was an adventure that we will remember forever. So sincere thanks. Despite a glitch in St Andrews your team's recovery actually made St Andrews the highpoint of our trip. Staying at Rusacks overlooking the first tee and eighteenth green of the old course was awesome. All the Hotels were first rate. Experiences - awesome The Clontarf Castle is an awesome way to the trip. Well done y'all. Big city stays - We all felt like we could have used an extra day in the larger cities. They all had a story to tell, and we just had enough time to scratch the surface. Self-drive - while less expensive alternative, the person doing the driving misses out on a lot in transit, while the passenger's white knuckle thru the driver's learning process. Also, the roads in Scotland and Ireland are no joke. Would recommend it is worth it to hire a private chauffer driver or go Small Guided for sure.

Adina, I'm following up on my client's train/whiskey tour/ birthday trip to Scotland in October. They had a wonderful time! The whiskey tour day was their favorite, made extra special by their driver Alec who was a super star. My client's boyfriend is a real train enthusiast. They enjoyed all the train trips, and Nick was like a child on the Jacobite train. Thanks so much for your help with this trip. You clearly know Scotland and planned a very nice route with some unique requirements. I greatly appreciate your expertise and attentive service. I look forward to working with you again in the future. An early Happy Holidays!

Jennifer, I want to thank you for planning and arranging our wonderful vacation in Ireland. Everything was easy Peezy as my granddaughter would say. The hotels were all beautiful, each one was uniquely different and beautiful. We enjoyed each and the food was enjoyable. We enjoyed all the extra goodies. We were not able to take either sea cruise as the weather canceled the trips. The best decision we made was to have a guide /driver. Martin was an absolute wonder. I wanted to bring him home with us. He saw to every detail and was extremely entertaining to boot. His recommendations were spot on to our interests. I think he knows everyone in Ireland. The car was super too. The back seats were massage chairs. How cool can you get? As a great extra the Owner of Screebe House bought two of my paintings and commissioned two more. Again, many thanks for the trip of a lifetime

Hi Jorie, Rose and I had a wonderful time in Ireland! We couldn’t believe how well everything worked out and the locations selected for our stays were excellent. We really loved the Country House and Abbyglen Castle. The staff at Abbbyglen Castle were so nice and made our anniversary evening wonderful! We had no idea there was so much aviation and radio history in Clifden! As for the other locations they were all first rate as well. We went to the “Man O’ War” Pub for dinner our last night in Ireland. It was a great recommendation. The atmosphere, hospitality, and food were awesome. Again, thank you for helping to set up a wonderful trip which we will never forget.
