Dining

The Springboard Restaurant: Our casual, relaxed bistro is called The Springboard, referencing the fact that the site of this Cork hotel was originally the home of the city's renowned public baths, the Lee Baths, which opened in 1934 and closed in 1986. There are unique images on the walls taken from the years when this area was an enormously popular spot for meeting and spending time together for the locals of Cork. We hope The Springboard is as popular a meeting place as the Lee Baths were back in the day – this time however with our guests looking out at the water instead of in it! The Springboard offers a wonderful and varied menu - open daily from 12.30pm until 9.30pm. Fairbanks Restaurant: The chic Fairbanks Restaurant at The Kingsley is so named in a nod to the famous Cork ballad ‘The Banks of My Own Lovely Lee’, a song beloved by Corkonians which celebrates the beauty of the city and its river. A sophisticated and elegant space in which to spend time over a leisurely and enjoyable meal nestled in the heart of this four star hotel in Cork, Fairbanks is where our Executive Chef Gary Burke gets to indulge his most creative side. Open on Friday and Saturday evenings and each morning for breakfast. Fishers Bar: The intimate and attractive bar at The Kingsley Hotel in Cork is called Fishers, in tribute to the hotel’s appropriate and individual little emblem – the stylish and vibrant kingfisher, often to be seen along the riverbank. This is a snug and intimate bar with a traditional feel, serving a selection of  local Cork stouts and beers, as well as craft ciders and traditional whiskeys.
